1/3 cup light cream cheese; 1 shallot (chopped finely); 2 tsp lemon juice; 1/2 tsp Dijon mustard; 1 tsp drained capers rinsed, chopped coarsely; 1 loaf sourdough; 30g baby rocket leaves; 200g smoked salmon
Steps:
Preheat grill
Combine cream cheese, shallot, juice, mustard and capers in small bowl.
Trim ends from bread, cut into eight slices. Toast bread both sides. Spread cheese mixture over toast; divide among plates. Top with rocket and salmon..
