Thai flavored mussels



Bruschetta with smoked salmon, cream cheese and rocket.

1/3 cup light cream cheese; 1 shallot (chopped finely); 2 tsp lemon juice; 1/2 tsp Dijon mustard; 1 tsp drained capers rinsed, chopped coarsely; 1 loaf sourdough; 30g baby rocket leaves; 200g smoked salmon

Steps:

  1. Preheat grill

  2. Combine cream cheese, shallot, juice, mustard and capers in small bowl.

  3. Trim ends from bread, cut into eight slices. Toast bread both sides. Spread cheese mixture over toast; divide among plates. Top with rocket and salmon..
