Bring on the Veggies

I’ve never been much of a meat eater, although I do eat meat.  Joe grew up eating a lot of pork, since it seems Filipinos believe pork is a vegetable…  Anyway, Joe has discovered veggies in the past few years, and has limited his intake of pork.  He became especially compelled to eat more vegetarian meals after coming back from a cottage this spring where he only ate vegetarian meals and felt great!  In an effort to eat more veggies, we bought this book to help us out:

The folks at NPR generally compile a good list and this one, highlighting ten simple cookbooks for summer, is no exception. From vegetarian, to regional, to dessert, there something to capture the interest of any palate.
